Lola Gaspar, a popular bar and restaurant in Downtown Santa Ana, has been added to the MICHELIN Guide of top restaurants in the world.
Here is an excerpt from the MICHELIN Guide’s entry about Lola Gaspar: “Tacos are made with handmade flour tortillas topped with a grilled tomato and dried chili salsa and filled with everything from sauteed shrimp to pork shank carnitas and suadero. Quekas feature hand-pressed masa and are served with a habanero salsa.“
This is Santa Ana’s third Michelin star restaurant. The other listed Santa Ana restaurants are Omakase by Gino and El Mercado Modern Cuisine.
Lola Gaspar is a modern Mexico City-inspired gastrobar led by Chef Luis Perez. They have been serving the Santa Ana community and visitors for the past 15 years.
You can check out Lola Gaspar’s menu here. They offer a variety of canned and bottled beers, cocktails featuring Mezcal and Tequila, appetizers, and tacos and quesadillas. The tacos cost $5 to $7.50 each. The quesadillas cost $9 to $14 each. The only desserts offered are churros, priced at two for $10. They are served with warm bittersweet chocolate sauce.

Michelin started out as a tire company when brothers Andre and Edouard Michelin founded it in 1889. They started their MICHELIN Guide to give drivers a reason to get on the road and go eat at all the fabulous restaurants in France. Their guide laster included hotels. In 1926, the guide began to award stars for fine dining establishments, initially marking them only with a single star.
Five years later, a hierarchy of zero, one, two, and three stars was introduced, and in 1936, the criteria for the starred rankings were published. The guide now rates over 30,000 establishments in over 30 territories across three continents, and more than 30 million MICHELIN Guides have been sold worldwide since.
